Scamorza raw cow's milk cheese. A pasta filata (stretched-curd) cheese that we then brine-salt and air-age. This is why our scamorze have that lovely rind with an intense yellow colour. Our cows graze freely in our hills feeding on wild spontaneous grasses. In winter we feed them mainly with organic feed produced on our farm. The true stars of our cheeses are indeed them: our cows. The Latteria Riccianico is a small dairy in Mugello, located in an unspoiled area amid the woods and hills of Firenzuola, where we produce raw milk cheeses with organic feed from our farm; this is where Scamorza is born

Scamorza

We are in the green Mugello area, here in our farmhouse dairy we produce cheeses just like in the old days. Ours is a farmhouse dairy. We produce all our raw milk cheeses and the rinds are untreated. We have our own herd and feed our cows mainly with the organic feed we produce on our farm. From spring to autumn our cows graze freely and feed on wild spontaneous grasses. Semi-hard raw-curd cow's milk cheese. Pasta filata (stretched-curd) cheese, we brine-salt it and air-age it, giving it a lovely deep yellow rind. Like all the cheeses from our dairy, our scamorza is also made with raw milk from cows raised on organic mountain hay also produced on our farm. Our cows, in fact, graze freely in our hills feeding on wild spontaneous grasses. In winter we feed them mainly with organic feed produced on our farm. The true stars of our cheeses are our cows. The excellence of the Alpine Brown breed! Aging is short, from 3 to 30 days.
