centuries-old meadows, rich in herbs and essences now unknown and impossible to find elsewhere, which give the milk, and therefore the cheese, exclusive aromas. Parmigiano Reggiano DOP is one of the most well-known and appreciated Italian cheeses. Produced according to the specification, with only milk, salt and rennet, without the addition of additives or preservatives, it is 100% natural. It is made up of 30% water and as much as 70% nutrients, including high-quality proteins (as much as 32 g per 100 g of product), vitamins and minerals, especially calcium, phosphorus and selenium. Rich in essential amino acids, it is easily assimilated thanks to the presence of enzymes that modify casein and make it highly digestible. It is also naturally lactose-free, converted, already within the first 48 hours of production, into lactic acid by lactic bacteria. Finally, it has a lower fat content than most other cheeses. The farming process We produce it exclusively with milk from the farm's own cows, fed with hay grown in the farm's own meadows, centuries-old meadows, rich in herbs and essences now unknown and impossible to find elsewhere, which give the milk, and therefore the cheese, exclusive aromas. Azienda Agricola Bonat is a full-cycle farm: from animal feed, to milk, to cheese-making, right through to sale, everything is managed and cared for in-house, ensuring perfect traceability, which guarantees the exceptional quality of a product looked after in every smallest detail with precision, dedication and care.
