The Parmigiano Reggiano from the Bonat family is produced exclusively with milk from the farm's own cows, fed with hay grown in the family's own meadows, century-old meadows, rich in herbs and essences that are now unknown and impossible to find elsewhere, which give the milk, and therefore the cheese, exclusive aromas. Parmigiano Reggiano DOP is one of the best known and most appreciated Italian cheeses. Produced according to strict specifications, with only milk, salt and rennet with no added additives or preservatives, it is 100% natural. Parmigiano is made up of 30% water and as much as 70% nutritional substances, including high-quality proteins (as much as 32 g per 100 g of product), vitamins and minerals, especially calcium, phosphorus and selenium. Rich in essential amino acids, it is easily assimilated thanks to the presence of enzymes that modify the casein and make it highly digestible. It is also naturally lactose-free, converted into lactic acid by lactic bacteria already within the first 48 hours of production. Finally, it has a lower fat content than most other cheeses.
