Parmigiano Reggiano DOP is one of the most well-known and appreciated Italian cheeses. Produced according to the production specification, with only milk, salt and rennet without the addition of additives or preservatives, it is 100% natural. It is made up of 30% water and as much as 70% nutrients, including noble proteins (as much as 32 g per 100 g of product), vitamins and minerals, especially calcium, phosphorus and selenium.
Rich in essential amino acids, it is easily assimilated thanks to the presence of enzymes that modify casein and make it highly digestible. It is also naturally lactose-free, already converted within the first 48 hours of production into lactic acid by lactic bacteria.
Finally, it has a lower fat content than most other cheeses.
