Pecorino bagnolese aged 24 months, made only with fresh Campanian sheep's milk from the native Malvizza breed. Subjected to a natural, slow 24-month ageing process. The flavour is bold, melts smoothly in the mouth, with rich and intense aromas and a light natural spiciness on the finish.
Thanks to the particular native sheep breed, the Bagnolese sheep, found in the areas surrounding Bagnoli Irpino and the Monti Picentini, the dairy Milk Coopproduces a pecorino bagnolese aged 24 months
Pecorino bagnolese aged 24 months
A truly exceptional pecorino. The special feature of this product comes precisely from the use of milk from the Malvizza sheep. They are left to graze in the wild or semi-wild. The sheep is free to feed on entirely natural foods: sulla hay, alfalfa and countless other plants from the meadows of Irpinia and Sannio.
The milk from the Bagnolese sheep is rich in nutrients. These are passed on to the pecorino bagnolese aged 24 months obtained.
This is a cheese with a robust, decisive and penetrating flavour and aroma. For this reason, some serve it with chestnut honey, jams and dried figs.
A company with ancient roots, passing down the art of milk processing from generation to generation.
It was 1800 when it all began. Since then, over 200 years have passed and the Azienda Agricola Nigro has transformed into the Milk Coop Cooperative. Joining together with 8 members who supply milk daily. For the production of pecorino cheese the milk of the Bagnolese sheep is used, and for the production of other types of aged and fresh cheeses, cow's milk from the pastures of Irpinia and Sannio.
The years have passed but the philosophy has always remained the same. Keeping cheesemaking as tradition dictates, always aiming to improve ancient production techniques.
The milk of the Milk Coop Cooperative comes from native Campanian breeds. Here the animals grow in the utmost respect for nature. In the Cooperative's farms, the natural timing and rhythms of life are respected. In fact, the animals are left free to choose among countless wild grasses in their pastures. A wealth in terms of biodiversity. All this gives the milk truly unique organoleptic and sensory properties.
For this reason, the scamosciato cheeses, aged cheeses and fresh cheeses produced by the Milk Coop Cooperative are seasonal and zero-kilometre.
