Brisval was founded by a group of entrepreneurs united by their bond with their homeland, Valchiavenna, the Lombard valleys that, together with Valtellina, gave birth to bresaola, the most famous of beef cured meats. From this passion came the idea of enhancing this product by selecting the finest Italian cattle breeds and the best meats in the world with unique characteristics, such as Fassona Bresaola.
Fassona refers to cattle of the Piedmontese breed, the most important native Italian breed, guaranteed to be both born and raised in our region. It was originally characterised by a so-called triple purpose use, namely milk, work and meat; then, with the industrialisation of agricultural production processes, its use for work gradually declined. It took over 150 years of selection to arrive today at a meat that is renowned and qualitatively established worldwide. Piedmontese Fassona meat stands out for its tenderness, due to the very low presence of connective tissue and low cholesterol content, with a clear balance in the distribution between saturated fats, monounsaturated and polyunsaturated fats. This results in a richness in omega3 and omega6, which is why it can easily fit into a diet that values both flavour and lightness. Great attention is paid to the feeding of the cattle in order to be able to ‘monitor’ their metabolism, directing it more towards protein synthesis rather than fat accumulation, a process due precisely to the breed's genetic makeup. On the ‘nose’, it recalls the aroma of hay and field herbs. These sensations are then fully confirmed on the palate. The absence of preservatives further enhances the quality of this Bresaola, which is excellent as a main course paired with a fresh salad, or combined with a side of soy sprouts, making this dish tasty as well as fresh. All products are free of allergens, gluten and lactose, and contain no preservatives.
