It is with this spirit that Anna Rita, owner of the Vecchio Frantoio family-run farm, continues to prepare her olives all'ascolana according to the recipe of her mother Bruna.
And since the first ingredient for the success of each recipe is the quality of the raw materials, Anna Rita carefully selects all the ingredients: the best soft Ascolana olives, produced by the same company or by local farmers, the first choice pork and beef. local farmers, Parmigiano Reggiano DOP, vegetables grown in their own garden and eggs from their own hens.

Anna Rita, Enzo e il figlio Marco sono il cuore e l'anima di questo mondo immerso nella natura sulle colline interne ascolane, di fronte al Monte Ascensione. Il paesaggio che si gode da qui è uno dei più belli e ben conservati della regione. Sono ancora presenti elementi di naturalità e zone rurali che conservano caratteri originali sia per le caratteristiche dei borghi sia per le antiche pratiche colturali.
Qui si coltivano olive, che sono le vere e proprie protagoniste del territorio, uva, frutta e ortaggi.
Circa 250 piante di olivo, varietà Carboncella, Leccino del Corno, Tenera Ascolana, e poi gli alberi da frutto: fichi, prugne, mele cotogne, albicocche, ciliegie, more e lamponi.
E il piccolo vigneto di famiglia con viti di Sangiovese, Montepulciano, Rosso Piceno, uva fragola detta anche Americana. Dalle uve si ricava il buon vino cotto, specialità unica nel suo genere, ricavato dalle migliori uve scelte e prodotto con metodi fedeli alla tradizione.
Qui non si adoperano né pesticidi, né fitofarmaci, il concime è di origine organica, gran parte proveniente dai propri animali di bassa corte, e il restante acquistato da altre aziende agricole.
In base alla stagione vengono raccolti i prodotti dell'orto e del frutteto e trasformati nella cucina dell'azienda, il tutto secondo natura.
