The extra virgin olive oil of the Vecchio Frantoio farm is obtained from olives of the Frantoio, Leccino and Carboncella varieties harvested at the right point of ripeness.
Once harvested, the olives are taken to the trusted oil mill, where the pressing is carried out in a continuous cycle, with modern 2/3 phase centrifuges.
Subsequently the oil is placed in stainless steel drums at a constant temperature of 15 degrees.
It is an unfiltered oil but decanted in a natural way, this can give rise to a slight sediment on the bottom
of the bottle.
It is a valuable oil, very renowned in the production area and known under the denomination of Rosara oil.
