We raise in our woods and plots a ancient breed of black pig. Thanks to the special area where we are located, we raise our pigs in the semi-wild state. A rediscovered breed which appears to originate from a pig similar to the boar. We are located in an uncontaminated place, this is where we produce our sausages of Macchiaiola Maremmana®. The breeding follows a strict set of rules for ensure their healthiness and quality this is what distinguishes the meat of the Black Pig “MACCHIAIOLA MAREMMANA”®. There Cured Sausage It is prepared with the addition of salt only and stuffed with natural casings
It has a maturation of about 40 days. The flavor is intense and is similar in characteristics to a salami.
We stuff the Seasoned Sausage with a classic chain-shaped binding. The product is made with the addition of salt only. We recommend serving it sliced and accompanied by fresh bread or diced in a mixed salad.
