There Fattoria is unique, a true example of a hard-working and passionate family, here everyone collaborates for the prosperity of the farm. But what is most striking is that despite the morning wake-ups at the time “lends” the hard work of the whole day, without breaks, one day after the other. Each member welcomes you with a smile and everyone has the same purpose and the same goal: the welfare of their animals and the production of wines according to nature.
We are at an altitude of 100 meters above sea level. The exposure is south-west on clay soils. To produce it we use special attention. The harvest is done manually selecting the bunches directly in the field. The harvested grapes are placed in small boxes to avoid being crushed. All the steps are carefully controlled to obtain the maximum expression and the best quality. Fermentation in red with indigenous yeasts and maceration for 5 months in terracotta amphora from Impruneta. Refinement
on the rocks in Acacia Barrique and oak for 12 months with weekly batonnage.

VINIFICATION AND AGEING
Manual harvest first ten days of September. best bunches selected directly in the vineyard. Transport in 17 kg crates to avoid breaking the grapes. Fermentation in red with indigenous yeasts and 5 month maceration in terracotta amphora from Impruneta. Refining on the lees in Acacia Barrique and oak for 12 months with weekly batonnage. Aged in bottle for at least 8 months.

TASTING NOTES
Color: Color amber
Aromas: On the nose it offers a bouquet complex where the prevail floral aromas and ripe fruit, caramelized figs and candied fruit. The refinement in acacia wood gives elegance.
Taste: Complex mouth, velvety and decisive tannin, notes of honey and ripe fruit. Characterized by a good acidity which makes it persistent and harmonizing the large structure. Ideal for a risotto or to accompany a nice platter of semi-mature goat cheeses.
Serving temperature: 16/18 °C
FOOD PAIRINGS
The ideal combination is with semi-mature cheeses, the risottos ei white meat dishes. Perfect with a nice goat cheese platter.
2021 was a drought year with high temperatures since early May. This has meant that the grapes arrived healthy at the harvest without too much effort.
