Seasoned Throat is a salami, one Friulian specialties made with the throat of the pig from which it takes its name and to which it comes left the rind. The processing creates a more or less triangular shape. Before being aged for at least three months, the gorge is flavored with herbs, spices and dry black wine and left to rest for the time necessary for it to flavor naturally.
Produced with selected meat, a cut characterized by a slight lean component and a greater part of pinkish-white fat, a characteristic that gives the product its tenderness and sweetness, in the final phase of the production process it is subjected to a slight smoking performed with a mixture of driftwood aromatics which give the meat a sweet and fruity aroma. Ideal to serve as an appetizer in a mixed platter of cold cuts and cheeses or as an ingredient for the preparation of delicious first courses.
