Azienda Agricola La Fenice

La marroneta della Fenice è considerato un "bene" di famiglia, di padre in figlio si è voluto conservarne integra e intatta la tradizione perpetrando la raccolta e la selezione a mano, il tutto in un vero e proprio ambiente incontaminato, assolutamente naturale, si potrebbe definire un vero bosco. I marroni, una volta essiccati con metodo tradizionale, vengono selezionati a mano garantendo una vera alta qualità del prodotto finito, che non subisce danni da contusione e si presenta con un guscio luminoso e lucente. Il marrone è un’eccellenza che fu voluta dalla famiglia Medici. Le cultivar più pregiate sono territorialmente nella zona dal Falterona a Firenzuola. La farina ancora oggi è fatta con il metodo tradizionale, si essiccano i marroni per 45 giorni sopra graticci con un fuoco di legna di castagno che viene alimentato continuamente, segue una cernita manuale e una lenta macinatura per evitare che si surriscaldi.
I prodotti sono tutti interessanti, le creme spalmabili hanno sapori intensi e autentici con un alta percentuale di frutto all'interno, ottimi i biscotti in tutte le varianti, ottenuti da farine di grani antichi e di marroni. Il cioccolato con la farina di marroni è stata una vera scoperta. Da provare la farina e i marroni secchi utilizzabili in abbinamenti sia dolci che salati e tutti da assaporare.
Per il futuro l’azienda ha in serbo numerosi progetti come la pasta e la birra, il tutto ai marroni.
