It is obtained from the back of the bovine, near the tail, and is distinguished by its triangular shape and the thick layer of fat that covers it. Much appreciated in Argentinean cuisine, especially for churrasco. Bresaola is the result of a slow and respectful processing of the raw material, with no chemical preservatives or artificial flavourings.
