Bluefin tuna arrive in the Mediterranean in April via the ocean Strait of Gibraltar. La stagione della pesca si concentra in 30 giorni tra maggio e giugno. Gli esemplari catturati sono rapidamente trasferiti in grandi vasche nel mare di Sicilia e alimentati con solo pesce azzurro (aringhe e sarde) così da garantire alle sue carni le migliori proprietà. Un alto contenuto di grassi insaturi e Omega 3. Segue un processo rapidissimo in 4 minuti il tonno passa dal mare alla surgelazione a meno 70°. Su ogni barattolo è riportato il numero BCD (bluefin tuna Catch Document) an “identity card” that guarantees the traceability from the sea to the table. Anno 1381: una impressionante eruzione dell‘Etna rimodella una parte della costa a nord di Catania. L’antico ed importante porto di Ulisse viene riplasmato nel piccolo e pittoresco porticciolo di Ognina, alle foci del fiume Lognina. Questo porticciolo ubicato in uno dei tratti di costa piú belli della Sicilia. Questo è lo scalo da dove da 200 anni la famiglia Testa mette a mare le proprie barche per la pesca del pesce azzurro e del tonno. Le antiche barche a vela di legno hanno lasciato il posto a barche a motore negli anni ’50 del secolo scors. Venti anni dopo sono arrivate le grandi navi moderne in acciaio e forti di questa tradizione e passione è nata la linea Testa Conserve.
