the history of the family dates back at least two centuries ago, even today in the town there is a street named after them, the fishing of bluefin tuna It represents a real passion and precision and is carried out in just thirty days a year.  Bluefin tuna is a protected marine species whose catch is regulated by quotas ICCAT which limit their capture by number and weight. Thanks to this, the Mediterranean is being repopulated with this species.

Fishing for Bluefin Tuna

I tonni rossi arrive in April in Mediterranean passing from the ocean to the Strait of Gibraltar. The fishing season is concentrated in 30 days between May and June. The tuna caught with surrounding nets are quickly transferred. Placed in large tanks in the Sicilian sea and fed only with blue fish (herrings and sardines) to ensure its meat has the best properties. A high in unsaturated fats and omega-3. Following a very rapid process in 4 minutes the tuna passes from the sea to freezing at minus 70°.

The belly is the most prized part of the tuna: it is the cut obtained from the ventral area of the fish, near the belly.. The belly is soft, buttery and full of flavour thanks to the high percentage of unsaturated fats. Placed in a glass container with Sicilia PGI EVO oil and closed after filling with the governing liquid. The product is stabilized by sterilization.

Anno 1381: una impressionante eruzione dell‘Etna rimodella una parte della costa a nord di Catania. L’antico ed importante porto di Ulisse viene riplasmato nel piccolo e pittoresco porticciolo di Ognina, alle foci del fiume Lognina. Questo porticciolo ubicato in uno dei tratti di costa piú belli della Sicilia. Questo è lo scalo da dove da 200 anni la famiglia Testa mette a mare le proprie barche per la pesca del pesce azzurro e del tonno. Le antiche barche a vela di legno hanno lasciato il posto a barche a motore negli anni ’50 del secolo scors. Venti anni dopo sono arrivate le grandi navi moderne in acciaio e forti di questa tradizione e passione è nata la linea Testa Conserve.
