Tuna Bottarga 

Bluefin tuna arrive in the Mediterranean in April via the ocean Strait of Gibraltar. The fishing season is concentrated in 30 days between May and June. The captured specimens are quickly transferred to large tanks in the Sicilian sea and fed only blue fish (herring and sardines) so as to guarantee the best properties of the meat. A high content of unsaturated fats and Omega 3. Following a very rapid process in 4 minutes the tuna passes from the sea to freezing at minus 70°.

A very short supply chain and circular work for the family, which therefore takes care of the conservation and transformation of the red tuna and blue fish in its factory. Anno 1381: una impressionante eruzione dell‘Etna rimodella una parte della costa a nord di Catania. L’antico ed importante porto di Ulisse viene riplasmato nel piccolo e pittoresco porticciolo di Ognina, alle foci del fiume Lognina. Questo porticciolo ubicato in uno dei tratti di costa piú belli della Sicilia. Questo è lo scalo da dove da 200 anni la famiglia Testa mette a mare le proprie barche per la pesca del pesce azzurro e del tonno. Le antiche barche a vela di legno hanno lasciato il posto a barche a motore negli anni ’50 del secolo scors. Venti anni dopo sono arrivate le grandi navi moderne in acciaio e forti di questa tradizione e passione è nata la linea Testa Conserve.
