Mimosa sandwiches: a recipe as simple as it is tasty, dedicated to all women! Crispy on the surface with a tender and tasty heart thanks to the Pecorino di Manciano cream and the Capuliato.

Ingrediants:

For the mimosa sandwiches:
• Bread for Tramezzini
• Eggs (1 for each slice of sandwich bread)
• 30 g of butter
• Thyme
Pecorino di Manciano cream
Capuliato
• Salt and Pepper To Taste

Preparation of Mimosa sandwiches:

Start preparing your mimosa sandwiches by cutting the slices of bread into cubes of about 1 cm. Then take a bowl and beat the eggs. Consider a new every slice of bread you decide to use. Season the eggs with salt and pepper and dip the bread cubes in them. Turn them well in the egg so that they get soaked.

When the egg is well absorbed, place the bread on a baking tray. Shape into a square or rectangle about 1cm high. At this point, sprinkle the surface with thyme and bake in a convection oven for about 15 minutes. The cubes will have to compact to form a single crunchy slice, which will surely remind you of the mimosa! Then cut it so as to obtain a number of pieces equal to the number of sandwiches you intend to obtain.

Finally, take a slice of sandwich bread on which you will spread a layer of Cream of Pecorino di Manciano and Capuliato. Cut the slice into 4 pieces and close the sandwich using your bread-mimosa!
