Grapes: Trebbiano, Malvasia, San Colombano
Vineyard: Exposure west altitude 260 mt.
Farm: spurred and inverted cordon
Plant density: 3400/4500 plants per hectare
Harvest: in boxes in the first week of September. Then put on mats until after Christmas. This is followed by soft pressing and placing of the must in oak and chestnut wood barrels.
Fermentation temperature: 18/20 degrees
Vinification: Entirely in wooden carats
Refinement: in carats of wood for 5/7 years
ORGANOLEPTIC NOTES:
Color: amber with golden reflections
Smell: apple, dried fruit, honey and walnuts
Palate: sweet and enveloping, complex, exceptionally soft and persistent.
Pairings: mainly dessert wine, ideal with dry pastries "cantucci di Prato" also interesting combined with aged cheeses.
Service temp: room temperature or slightly cold with cheeses.
