Its peculiarity is due to the double cooking, first boiling and then baking in the oven, which give the tarallo a sweet crunchiness on the outside and a tasty friability inside.
Produced with extra virgin olive oil and flavored with fennel seeds, it is made in Puglia in all its essence, for this "doc". It best represents the goodness of Apulian gastronomy.
