Domenico Mangiarano, a traveler and food and wine enthusiast, tells his story: over the years I have worked hard to find small producers who are able to faithfully reproduce gastronomic specialties and ingredients of the highest quality. Our products are passion fruit and hard work. And the rediscovery of recipes that hark back to tradition. And in this wandering of mine, the production of quality pasta, made with the best ingredients. With careful processing and slow drying and bronze drawn. I focused on the quality of two ingredients: exclusively water and durum wheat semolina from 100% Tuscany.

L'water is from a spring that comes directly from the Pistoia mountains. And the wheat is grown in Maremma where even the soil is chosen specifically. of Maremma farmers where even the soil is chosen. The crops follow the natural rhythms accompanied by the most modern agricultural techniques. Our supply chain is traced and controlled by the field to table! And we get a wheat from it high protein contentIt is produced every day, always in the morning and then left to dry for three days in special wooden cells. It is a truly natural process. Thanks to the ancient technique of bronze drawing, each spaghetti has a rough surface. It is perfect for being wrapped in sauce and thus enhancing the seasoning.
After drawing, the pasta is subjected to slow drying, for three whole days in wooden cells. A method that harks back to the past, natural, which allows
to the pasta of to ripen slowly, preserving all the properties of wheat and giving the final product a superior quality.

“Il mio vuole essere prima di tutto un viaggio di scoperta, dove trovare ancora la voglia di gustare, assaggiare, assaporare e gioire" ecco come Domenico Mangiarano ci racconta l'impulso sul quale è nato  Corte del Dome.

The idea was born on the basis of his numerous travels that often took him outside of Italy and where just as often the desire to taste authentic flavors was not an easy task. Hence the desire to make known and discover abroad the our traditions and our flavours. Domenico creates his own line with high quality gastronomic specialties, the result of the work and passion of small artisans. Genuine products with the quality of the ingredients at their core. Domenico has become the spokesperson for a Made in Italy which represents a know-how and a quality gastronomic heritage.

The project could only have been born in the beloved and native Tuscany in search of the flavours of childhood, when entering your grandmother's kitchen you were enveloped by the scents of crostini sauce or ragù. Every product tells a story made of passion and generations, made of care and attention. The project is ambitious, the intent is to make known the flavors of our beautiful peninsula, region by region, each with its characteristics and uniqueness.

In a project like this, an important collaboration could not be missing: hence the choice of starred chef Marco Stabile who created the recipes by revisiting traditional Tuscan recipes and took care of the combinations. An example is our Ragù of only Tuscan vegetables created to accompany our delicate and tasty Mezze Maniche or an iconic dish like the Spaghetti with Tomato Sauce prepared as the Tuscan grandmothers they know how to do it!
