The Castelli sausage factory is located in the heart of the Province of Vicenza, here it carries on the traditional pork butchery Veneto, in particular the Vicenza one. We are in the homeland of Sopréssa, which since 2003 has obtained the Protected Designation of Origin, the first among the Venetian cured meats to obtain this recognition. Sopressa of the Castles
The Protected Designation of Origin distinguishes the Soprèssa Vicentina since 2003. Protected by strict regulations, it is produced exclusively with born pigs, raised and slaughtered in the province of Vicenza, using all cuts of pork, including the finest ones, to obtain a product of true excellence.
Soprèssa Vicentina is the sausage par excellence of the Venetian tradition. Produced with the finest cuts of pork, its balance between fat and lean parts gives it extraordinary sweetness and softness. These characteristics are maintained even after a long seasoning.
Available in pieces of approximately 1 kg, in the two traditional variants sweet and flavoured with garlic. Cylindrical in shape, the paste is compact and at the same time tender; the slice has a mixture with ivory-coloured holes distributed in such a way as to envelop the muscular fractions, leaving the product soft.
The grain is medium coarse and the color appears rosé tending towards redThe consistency on the palate is soft.
Salumificio dei Castelli offers it in two traditional variations: sweet and flavored with garlic.
