The Castelli sausage factory is located in the heart of the Province of Vicenza, here it carries on the traditional Venetian butchery, in particular the Vicenza one. From the meeting, risky at first sight, between the suppressed of the Salumificio dei Castelli and the famous passito wine Soprèssa al vino was born in the upper Vicenza area Breganze Torcolato DOC. Wine that in the Vicenza area is obtained from native grapes 100% Vespaiola. The presence of this wine in the dough, in addition to sweetening and flavouring, helps to leave the mouth pleasantly clean after tasting.
On the outside it appears covered with a light layer of light gray mold, the shape is cylindrical, slightly arched. Once cut, the slice appears shiny and compact, the grain is medium and the color appears rosy red with clear ivory colored holes.
The consistency at palate is soft and not very resistant to chewing, it leaves a pleasant aftertaste characteristic of passito wine.
Thanks to the agreement stipulated with the Consorzio Tutela Vini DOC Breganze, the Salumificio dei Castelli is thesole producer of the Breganze Torcolato DOC wine sopréssa
To make its own cured meats, the salami factory uses fresh heavy Italian pork meat or fine cuts of beef: carefully selected and processed manually with a knife, to guarantee high quality control. All cuts of the pig are used, including the finest ones, to obtain a product of true excellence.
All the cured meats of the Salumeria dei Castelli are included in the AIC handbook (Italian Celiac Association).
