A specialty prepared with the summer truffle: one of the easiest species to find, most abundant. It has a long harvest period, the summer truffle is widespread throughout the world. It has a scent that recalls the aroma of porcini mushrooms, with notes of hazelnut and undergrowth. Its intensity increases with maturation.  Presents a The flavor is delicate, leaving a pleasant and non-invasive aftertaste. This truffle prefers calcareous and well-drained soils and grows mainly in symbiosis with oaks, hazelnuts, hornbeams and lime trees.
