Like all Marchisio cured meats, this salami is also produced with meat from pigs born and raised in Italy, in conditions of well-being and fed with top quality cereals.
The meat is medium-grain minced and flavored with well-dosed spices and herbs, with the addition of Barolo wine to the mixture.
The stuffing in natural casing is followed by seasoning in fresh "paiole", which lasts from two to four weeks.
