Cerca personalmente i tartufi e per la sua produzione ne acquista sempre e solo da cavatori locali, partecipa a numerose fiere specializzate dove oltre ai suoi prodotti propone anche lo street food sempre al prezioso aroma. Nel suo progetto ha coinvolto la figlia Eleonora alla quale ha trasmesso la passione, insieme collaborano alla diffusione dei prodotti e alla creazione di nuovi abbinamenti e proposte.
