Organic Tofu

We are in Montecompatri near Rome. Here the project of the small producer Tofu Bio Otani was born. A virtuous project that required great dedication. The activity of producing Tofu was started by Ruriko Otani in 1992. Over twenty years of experience in the production of Tofu Bio. A project that comes from an important training, the producer in fact trained alongside a Japanese Tofu Producer (Otani). The idea in fact was to produce a artisanal tofu following the dictates of Japanese tradition. This allowed him to obtain a high quality product and very far from commercial products.

What is Tofu??

Japanese tofu production is based on curdling soy milk with nigari, followed by pressing and cutting into different shapes, offering a wide range of tofu suitable for different culinary preparations. To produce it we use the soybeans organic production and we follow the traditional Japanese recipe that does not include additives or chemical solidifiers. The machinery was purchased from Japan, specifically made for the production of Tofu.

How to use natural tofu?! The tofu It is a very versatile ingredient in vegetarian cooking: rich in vegetable proteins, neutral in flavour and perfect for absorbing aromas and seasonings.

Tofu recipes: You can use the cream for a hot appetizer, with croutons or wholemeal bread. Ideal for seasoning pasta or gnocchi. Try it to fill savory pies, vegetable rolls.

Recipe with Tofu:

Whole wheat pasta with tofu cream and broccoli, toasted walnuts and lemon. IIn a pan, chop and toast the walnuts for a couple of minutes. Drain the pasta al dente and season it with the tofu and broccoli cream with a spoonful of pasta water. Serve with the addition of chopped walnuts and a drizzle of oil.

Biosolidale

Biosolidale è un'associazione di ditte laziali che produce ortaggi e frutta biologica e li trasforma in azienda in salse, creme, composte e succhi di frutta bio di altissima qualità.
Tranne gli agrumi per le marmellate di mandarini, arance e limoni, gli altri ingredienti provengono dalla zona dei Castelli Romani. I prodotti vengono raccolti appositamente per essere trasformati.
Nelle verdure sott'olio viene usato esclusivamente un olio extravergine laziale che si sposa benissimo con i vari broccoletti, le cime di rape o i carciofi. I succhi di frutta sono composti per il 60% da frutta e per il 40% da succo d'uva dei loro vitigni Frascati, come dolcificante.
In tutta la linea dei prodotti Biosolidale sono banditi coloranti, correttori di acidità, conservanti e solfiti aggiunti. Sono prodotti semplici e buonissimi, di un'eccellenza unica.
