The historian

Initially I had some doubts about how to combine this product, but I immediately changed my mind when I spread some on the caciocavallo. Unbelievable how perfect this combination is! Then I prepared some croutons, I spread some of it and voilà, a perfect aperitif! Highly recommended!

The Rotondo oil mills are located in land of Puglia, in the countryside of Monopoli, here, in proximity of the sea, majestic secular olive trees e Red earth characterize these places.

L'olive tree and the extra virgin olive oil obtained from it, have always represented the product symbol of Puglia, here the olives are grown as they used to be e they come immediately after harvesting by hand, ground with a thousand attentions.

In recent years, the Olifici Rotondo have started the production of bakery products, essence oils e jams.

Sweet and sour onion jam from Acquaviva : Don't miss this wonderful one sweet and sour onion jam from Acquaviva, famous for its sweetness and for its color purplish and white shades. The Acquaviva onion it is also recognizable by its typical flattened shape: a large disc 2-3 centimeters thick,  with a weight of about 500 grams. Its color is between carmine red and purplish and it lightens, towards the inside, until it becomes completely white. Cultivation takes place respecting the ancient tradition e in a completely natural way.

Gli Oleifici Rotondo sono una bella realtà frutto dell’intuizione imprenditoriale di Luigi Rotondo. Fu lui a rendersi conto di poter scommettere nel lontano 1958 su un frantoio di famiglia. E così andare incontro alle crescenti esigenze dei proprietari terrieri della zona. Erano loro – una volta raccolta le olive – ad avere la necessità impellente della molitura delle olive per ottenere una buona produzione generata dalla sapiente guida degli esperti presenti in frantoio.

But the presence of the founder Luigi is valuable in the company in supervising one production of extra virgin olive oils particularly appreciated. Why here the olives are grown as they used to be. And after a careful maturation they are ground with a thousand attentions as soon as they are picked by hand.
