The compotes of the Vecchio Frantoio farmhouse are made with seasonal fruit, carefully selected and harvested at the right degree of ripeness.
To ensure the highest quality, the fruit is processed immediately after harvesting, cooking takes about 3 hours on a low heat, in the meantime the jars are sterilized and washed inside with the cooked wine.
Once the desired consistency is reached, the compotes are put into jars and the jars are put in the oven for 10 minutes for pasteurization.
For the production of 100 grams of compote, 140 grams of blackberries are used.
