Il Vin Santo è il rinomato dessert wine della tradizione toscana. Il nome di questo vino ha origini remote,   viene dal termine Xantos, il nome attribuito al vino dorato Passito dell’Isola di Santorini. Dal gusto intenso e unico, il nostro vino da dessert lo produciamo con uve di Trebbiano and MalvasiaWe select the best grapes and carry out a late harvest necessaria ad ottenerne la massima espressione per questo vino. Una volta raccolte le uve le lasciamo essiccare essiccare in cantina in modo così da sostenere il lungo processo di invecchiamento. VINIFICATION AND AGEING

Manual collection of best grapes in ceste, selezionando prima il Trebbiano per l’acidità e poi la Malvasia bianca per il contenuto di zucchero. Drying in a Vinsantaia ventilated for 90 days. Gentle pressing and fermentation in small chestnut barrels con una “madre” di lieviti autoctoni. L’invecchiamento prosegue naturalmente per 3/4 anni.

TASTING NOTES

Color: Bright amber color with golden reflections.

Aromas: Intense and complex aroma, with notes of fig and date jam, toasted almonds, candied apricot and honey.

Gusto: In bocca è perfettamente equilibrato, showing freshness, residual sugar and a tasty finish. An immortal bottle with great harmony and very long persistence.

Serving temperature: 16 °C

COMBINATIONS

It pairs well with traditional Sienese sweets (Cantucci, Ricciarelli and Panforte), but also to blue cheeses, with chocolate, with eggnog e alla crema catalana. Storicamente è stato abbinato anche al fegato paté toscano.

A few kilometers from Siena, In the heart of Chianti the rises Montechiaro Estate. A historic cellar, a family story that has been passed down for generations. Since 2005, Alessandro Griccioli has been carrying on tradition with innovative wines with labels designed by a contemporary Italian artist.

Our wines pay homage to our family history:  AD 345 represents the line of our classic wines. In 1345 Grigio was born in Barberino di Val d'Elsa, founder of the Griccioli family (formerly Grigia) who moved to Siena around 1720. Today the family's properties are all located in the Siena area.: the Montechiaro Estate and Palazzo Griccioli in the Monteriggioni Castle. The Montechiaro Estate has an extension of 160 Ha of which 10 Ha of vineyards and approximately 2000 olive trees.

We have adopted the philosophy of organic and we have been certified since 2010. A commitment that requires more effort and manual work but which repays us with beautiful healthy grapes. Our choice is in line with the objective we pursue: quality. The choice of organic, produced in full respect of nature, allows us to enhance and create wines expression of the territory, related wines with the territory where they were created and therefore made unique. The Tenuta cellar was built in an 18th century building located in front of the villa. During the restoration, the original terracotta floors and the original structure were preserved. Today, next to the steel vats are the ancient cement vats that have been completely restored. Next to the cellar is the barrel cellar, once a stable and'ancient Vinsantaia.
