Ingredients for i crumbly corn cookies:
- 300 gr. Fine corn flour Andrea Fanchi
- 200 gr white flour
- 160 gr. Softened butter
- 100 gr. Sugar
- 2 eggs
- 2 teaspoons Vanillin
- 1 tsp baking powder for cakes
- 1 pinch of fine salt
Preparation:

Work the eggs with the sugar using a hand or electric whisk, until the mixture is light to frothy. Add the softened butter and mix. Gradually add 00 flour and corn flour, vanilla, baking powder and a pinch of salt, working the mixture with your hands. Pour it on a wooden board and mix everything together until you have a smooth and homogeneous ball. Cover it with cling film and let it rest in the fridge for 1 hour
After the necessary time, arrange the dough on a floured work surface and roll it out with a rolling pin. Obtain the biscuits with the mold of the shape you prefer and place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 180 ° C for about 20 minutes.
