Criollo is a very rare and precious variety of cocoa that, for years, was at risk of being lost: it is the cocoa of the Mayans and Aztecs, whose cultivation was gradually abandoned due to its low yield. It is a fragile cocoa and represents only 0.01% of the cocoa produced in the world.
Trinitario cocoa is an aromatic cocoa. It represents approximately 8% of the global harvest. Trinitario is a hybrid of Criollo and Forastero cocoa, which combines some of the aromatic and sensorial characteristics of the former with the vigor and high yields of the latter.
Domori has recovered this precious variety of cocoa, which it collects from plantations located between Latin America and Africa: in Colombia, Venezuela, Peru, Madagascar and Tanzania.
