Linguine (bronze seed) 500 gr BIO

In our project we have married the Biological as a choice and as a philosophy, we respect the land and its fruits. Our philosophy also includes supporting small businesses in our area, we have created a network of small businesses operating with the same organic philosophy as us in order to propose ourselves as an alternative to the traditional supermarket. By raising consumer awareness of conscious purchasing and the importance of short supply chain and organic products. For all our products the philosophy is always the same: for jams and preserves We only use organic products, lots of fruit and a little organic cane sugar. The pickles and creams are made with the best fresh local vegetables to which we add the highest quality Lazio Extra Virgin Olive Oil, to obtain a product of unique excellence.

The Linguine trafilate al bronzo BIO are made according to the principles ofbiological agriculture and the production process is artisanal.

The organic agricultural cooperative LA TERRA E IL CIELO was founded in 1980 from the pioneering initiative of its founding members, when organic farming was still in its infancy and was practically unknown. We are in the Marche region, a land that has always been known for its agricultural vocation. Here, since the beginning of its activity, the cooperative has cultivated not only following the philosophy of organic but also of biodynamic. This was at a time when people were just starting to talk about organic. The aim was to relaunch ancient cereals with crops that respected the environment and nature. Thus, the ancient varieties of cereals and legumes, selected for quality, one of the cornerstones of the business. Here then is the spelt (triticum dicoccum), particularly suitable for pasta making. Thebarley world to be roasted, used in the past as a substitute for coffee. The mile and the three durum wheats of ancient varieties (Senator Cappelli, Taganrog and Etruscan). chickling vetch (lathyrus sativus), once considered the legume of the poor, represent symbols of their choice of quality. Today the range of products has expanded and boasts a notable choice of types of cereal pasta, flour, rice, legumes, extra virgin olive oil, wines, barley coffee, sauces and purees, baked goods. Productions characterized by a traceability, almost entirely local and regional, that very few companies in Italy can boast.

Bronze Drawing

Pasta is prepared exclusively with semolina or semolina and water, and table salt, in a maximum amount of 4%. Semolina is obtained by grinding durum wheat. The water should be slightly hard and warm: its purpose is to form the dough. To produce pasta The classic method involves the following phases. The semolina or semolina is mixed with 20-30% of water to form the gluten and hydrate the starch, the resulting dough is then worked (kneading) until it reaches the right consistency.

Wire drawing:

The dough is forced through a cavity with the desired shape. With bronze dies, the pasta is rougher and absorbs the sauce better. Extrusion is a more modern method where the same phases described above occur continuously in the same machine. The results are equivalent, only the technology of the machinery changes.
