Nell‘anno 1090 a Gerusalemme al tempo della terza crociata, due mercanti tedeschi curarono ed ospitarono un cavaliere ferito e quindi fondarono un „ ospedale-albergo“ (dal concetto latino di Hospitalis=ospitalità) e praticamente diedero il via all’ordine cavalleresco-caritatevole dell’Ospedale di Santa Maria dei tedeschi di Gerusalemme, chiamato anche Ordine dei cavalieri Teutonici. In seguito alla caduta di Costantinopoli, questo ordine, come gli altri due grandi ordini cavallereschi del tempo ovvero i Templari ed i cavalieri di Malta, abbandonarono la terra santa. Dal Medio Oriente i cavalieri Teutonici si spostarono nel nord-est dell’Europa tra le popolazioni slave dove per alcuni secoli governarono un territorio grande come l’Italia. A noi, dei Cavalieri Teutonici, qui interessa soprattutto l’influenza sul tessuto sociale che ebbero in 800 anni di storia soprattutto sulle popolazioni dell’Europa nord-orientale e del bagaglio culturale ed enogastronomico che questi, cavalieri, monaci e suore hanno carpito, celato e custodito in tutto questo tempo. L’ordine esiste tuttora ed è presente ed attivo come organo di carità e solidarietà particolarmente in Germania ed in Austria. È in Carinzia , nel sud dell’Austria, nella medioevale città-fortezza di Friesach che ho scoperto un monastero di suore dell’Ordine Teutonico che produce deliziose marmellate, confetture ed altre specialità con frutta biologica dei propri terreni rigorosamente raccolti e controllati a mano, nella stretta osservanza delle ricette segrete dell’ordine. Le „Sorelle“ il cui nome per intero è „Schwestern vom Deutschen Haus St. Mariens in Jerusalem“, con l’ausilio della famiglia Pacher che ne cura il lato commerciale hanno quindi costituito il marchio DOSPA per offrire i loro deliziosi prodotti anche oltre le mura del loro convento.
