Nous sommes dans leArri\u00e8re-pays de la Maremme<\/strong>, ici, en 1961, par volont\u00e9 de 21 agriculteurs locaux, le\u00a0Laiterie sociale de Manciano<\/a>\u00a0qui compte aujourd'hui 250 adh\u00e9rents de petits et moyens \u00e9leveurs ovins\u00a0Manciano<\/strong> et ses communes voisines sont son lieu de naissance\u00a0Il Gorello - Fromage de brebis<\/strong><\/p>\n

Le projet<\/strong><\/h3>\n

Nous produisons uniquement le meilleur lait exclusivement \u00e0 partir de\u00a0Fermes de la Maremme<\/strong>\u00a0et c'est gr\u00e2ce \u00e0 cela que nos fromages ont une saveur incomparable. Nous nous soucions du\u00a0bien-\u00eatre des moutons<\/strong>Nous prenons soin de leur alimentation qui est de plus en plus li\u00e9e \u00e0\u00a0herbes<\/strong>\u00a0et \u00e0\u00a0essences indig\u00e8nes<\/strong>. Au fil du temps, nous avons d\u00e9velopp\u00e9 un projet qui allie la qualit\u00e9 du lait de brebis \u00e0 la durabilit\u00e9 environnementale. Pour y parvenir, nous utilisons \u00e0 la fois l\u2019innovation des produits et des processus. Un projet qui implique le\u00a0Lyc\u00e9e Sant'Anna de Pise<\/strong>, de laUniversit\u00e9 de Pise<\/strong>\u00a0et deUniversit\u00e9 de Florence<\/strong>\u00a0pour leur pr\u00e9cieux\u00a0contribution scientifique<\/strong>.<\/p>\n

Il y a dix membres\u00a0agriculteurs de la Laiterie Sociale\u00a0<\/strong>qui a rejoint le projet. L\u2019objectif est d\u2019am\u00e9liorer le\u00a0qualit\u00e9 du lait<\/strong>, red\u00e9couvrir\u00a0essences indig\u00e8nes<\/strong>\u00a0r\u00e9sistant \u00e0 la s\u00e9cheresse des mois d'\u00e9t\u00e9, \u0153uvrer pour avoir une mati\u00e8re premi\u00e8re disponible tout au long de l'ann\u00e9e avec un p\u00e2turage plus long. Introduire des pratiques agricoles durables. L\u2019objectif est de garantir\u00a0une plus grande biodiversit\u00e9<\/strong>\u00a0et la durabilit\u00e9 du secteur agricole. Tant d\u2019un point de vue environnemental qu\u2019\u00e9conomique.<\/p>\n

Il Gorello - Fromage de brebis<\/strong><\/h3>\n

La cro\u00fbte, grasse et plut\u00f4t lisse, a une couleur jaune paille<\/strong> d'intensit\u00e9 moyenne. L'aspect int\u00e9rieur r\u00e9v\u00e8le une robe ivoire tirant sur le jaune paille. Le nez per\u00e7oit d'int\u00e9ressantes notes de\u00a0cuit au lactique<\/strong>, beurre cuit<\/strong>, c\u00e9r\u00e9ales, aux ar\u00f4mes de l\u00e9gumes bouillis et fruit sec<\/strong>, notamment les abricots. Il laisse une agr\u00e9able sensation de fra\u00eecheur.<\/p>\n
