Ours is a\u00a0<strong>agricultural dairy.<\/strong>\u00a0We produce all the\u00a0<strong>raw milk cheeses<\/strong>\u00a0and the crusts are not treated. We have our own farm and feed our cows mainly with\u00a0<strong>organic fodder<\/strong>\u00a0that we produce on our farm. From spring to autumn our cows graze freely and feed on\u00a0<strong>wild spontaneous herbs.<\/strong><\/p>\n<p>Semi-hard raw cow&#039;s milk cheese. <strong>Stretched curd cheese<\/strong><em><strong>, <\/strong><\/em>we salt them in brine and season them in the air, which gives them a beautiful deep yellow skin.<br \/>\nScamorza, like all the cheeses from our dairy, is also produced with raw milk from cows raised with <strong>organic mountain hay<\/strong> always produced on the farm. In fact, our cows graze freely in our hills feeding on<strong>\u00a0wild spontaneous herbs.\u00a0<\/strong>In winter we feed them mainly with <strong>organic fodder<\/strong> products in our company.<\/p>\n<p>The real protagonists of our cheeses are our cows.
