{"id":6556,"date":"2019-05-03T16:19:18","date_gmt":"2019-05-03T14:19:18","guid":{"rendered":"https:\/\/www.foodaloo.it\/?post_type=product&#038;p=6556"},"modified":"2024-03-22T17:50:12","modified_gmt":"2024-03-22T16:50:12","slug":"san-bruzio-formaggio-di-pecora","status":"publish","type":"product","link":"https:\/\/www.foodaloo.it\/en\/shop\/san-bruzio-formaggio-di-pecora\/","title":{"rendered":"San Bruzio \u2013 Sheep Cheese"},"content":{"rendered":"<p>We are in the<strong>Maremma hinterland<\/strong>, here, in 1961, by the will of 21 local breeders, the\u00a0<a href=\"https:\/\/www.foodaloo.it\/en\/produttore\/caseificio-di-manciano\/\">Social Dairy of Manciano<\/a>\u00a0which today boasts 250 members of small and medium-sized sheep farmers\u00a0<strong>Manciano<\/strong> and its neighboring municipalities are where it was born <strong>San Bruzio \u2013 Sheep Cheese<\/strong><\/p>\n<h3><strong>The project<\/strong><\/h3>\n<p>We produce only the best milk exclusively from\u00a0<strong>Maremma farms<\/strong>\u00a0and it is thanks to this that our cheeses have an unmistakable flavour. We care about the\u00a0<strong>sheep welfare<\/strong>We take care of their nutrition which is increasingly linked to\u00a0<strong>herbs<\/strong>\u00a0and at\u00a0<strong>native essences<\/strong>. Over time, we have developed a project that combines the quality of sheep&#039;s milk with environmental sustainability. To achieve this, we use both product and process innovation. A project that involves the\u00a0<strong>Sant&#039;Anna High School of Pisa<\/strong>, of the<strong>University of Pisa<\/strong>\u00a0and of<strong>University of Florence<\/strong>\u00a0for their precious\u00a0<strong>scientific contribution<\/strong>.<\/p>\n<p>There are ten members\u00a0<strong>farmers of the Social Dairy\u00a0<\/strong>who have joined the project. The aim is to improve the\u00a0<strong>milk quality<\/strong>, rediscovering<strong>\u00a0native essences<\/strong>\u00a0resistant to the drought of the summer months, work towards having raw material availability throughout the year with longer grazing. Introduce sustainable agricultural practices. The aim is to ensure\u00a0<strong>greater biodiversity<\/strong>\u00a0and sustainability to the agricultural sector. Both from an environmental and economic perspective.<\/p>\n<h3><strong>San Bruzio \u2013 Sheep Cheese<\/strong><\/h3>\n<p>The paste of this cheese, of a rather soft consistency, offers a beautiful ivory color to the eye. The eyes are present in an irregular shape and of fine size.
