We are in the homeland of Sopr\u00e9ssa, which since 2003 has obtained the Protected Designation of Origin, the first among the Venetian cured meats to obtain this recognition. This is where the Sopr\u00e9ssa is born. <strong>Sopressa of the Castles<\/strong><\/p>\n<h3><strong>Sopressa of the Castles<\/strong><\/h3>\n<p>The Protected Designation of Origin distinguishes the <strong>Sopr\u00e8ssa Vicentina since 2003<\/strong>. Protected by strict regulations, it is produced exclusively with <strong>born pigs<\/strong>, raised and slaughtered in the province of <strong>Vicenza<\/strong>, using all cuts of pork, including the finest ones, to obtain a product of true excellence.<br \/>\nSopr\u00e8ssa Vicentina is the sausage par excellence of the Venetian tradition. Produced with the finest cuts of pork, its balance between fat and lean parts gives it extraordinary sweetness and softness. These characteristics are maintained even after a long seasoning.<\/p>\n<p>Available in pieces of approximately 1 kg, in the two traditional variants sweet and flavoured with garlic. Cylindrical in shape, the paste is compact and at the same time tender; the slice has a mixture with ivory-coloured holes distributed in such a way as to envelop the muscular fractions, leaving the product <strong>soft<\/strong>.<br \/>\nThe grain is medium coarse and the color appears <strong>ros\u00e9 tending towards red<\/strong>The consistency on the palate is soft.<\/p>\n<p>Salumificio dei Castelli offers it in two traditional variations: <strong>sweet<\/strong> and <strong>flavored with garlic.<\/strong><\/p>\n<p>All the cured meats of the Salumeria dei Castelli are included in the AIC handbook (<strong>Italian Celiac Association<\/strong>).<\/p>","protected":false},"excerpt":{"rendered":"<p><strong>Sopressa of the Castles<\/strong><\/p>\n<p>Produced with the most <strong>fine cuts of pork,<\/strong> its balance between fat and lean parts gives it <strong>extraordinary sweetness and softness<\/strong>, even after a long seasoning.
