We are in the homeland of Sopr\u00e9ssa, which has obtained the Protected Designation of Origin since 2003, the first of the Venetian sausages to obtain this recognition, this is where the <strong>Sopr\u00e9ssa with Breganze Torcolato DOC wine<\/strong><\/p>\n<p><strong>Sopr\u00e9ssa with Breganze Torcolato DOC wine<\/strong><\/p>\n<p>From the meeting, at first sight risky, between the<strong> sopr\u00e9ssa<\/strong> of the Salumificio dei Castelli and the famous<strong> passito wine<\/strong> Sopr\u00e8ssa al vino is born in the upper Vicenza area <strong>Breganze Torcolato DOC<\/strong>. Wine obtained from native grapes in the Vicenza area <strong>100% Vespaiola<\/strong>. The presence of this wine in the dough, in addition to sweetening and flavoring, helps to leave the mouth pleasantly clean after tasting.<br \/>\nOn the outside it appears covered with a light layer of light grey mould, the shape is cylindrical, slightly curved. Once cut, the slice appears shiny and compact, the grain is medium and the colour appears <strong>rosy red<\/strong> with clear ivory colored holes.<br \/>\nThe consistency at <strong>the palate is soft<\/strong> and not very resistant to chewing, it leaves a pleasant aftertaste characteristic of passito wine.<br \/>\nThanks to the agreement stipulated with the Consorzio Tutela Vini DOC Breganze, the Salumificio dei Castelli is the<strong>sole producer of sopr\u00e9ssa al vino Breganze Torcolato DOC<\/strong><\/p>\n<p>To make its own cured meats, the salami factory uses\u00a0<strong>fresh heavy Italian pork meat<\/strong>\u00a0or prized beef cuts: carefully selected and manually worked with a knife, to guarantee high quality control.
