We are in the homeland of Sopr\u00e9ssa, which has obtained the Protected Designation of Origin since 2003, the first of the Venetian sausages to obtain this recognition, this is where the\u00a0<strong>Sopr\u00e8ssa Vicentina PDO with garlic<\/strong><\/p>\n<h3><strong>Sopr\u00e8ssa Vicentina PDO with garlic<\/strong><\/h3>\n<p>The Protected Designation of Origin (<strong>DOP<\/strong>) distinguishes the <strong>Sopr\u00e8ssa Vicentina<\/strong> since 2003. Protected by a strict specification, it is produced exclusively with pigs born, raised and slaughtered in the province of Vicenza, using all cuts of pork, including the most prized ones, to obtain a product of true excellence. The salami factory offers it in two traditional variants: sweet and <strong>flavored with garlic.<\/strong><br \/>\nThere<strong> Sopr\u00e8ssa Vicentina PDO<\/strong> on the outside it appears covered with a light layer of light gray mold, the shape is cylindrical and slightly arched.<br \/>\nThe pasta is compact and at the same time<strong> tender<\/strong>; the slice presents a mixture with ivory-coloured holes distributed in such a way as to envelop the muscle fractions, leaving the <strong>soft product.<\/strong><\/p>\n<p>The grain is medium-large and the color appears pink tending to red with clear ivory-colored eyes. The consistency on the palate is soft and not very resistant to chewing.
