All Casa Serra cuts of meat come exclusively from their non-intensive pasture farming, which enhances the taste, tenderness and nutritional properties of the meat, rich in Omega 3, fat-soluble vitamins and unsaturated fats. This type of breeding also reduces the risk of animals getting sick and needing medicines, especially antibiotics. Cattle graze in the open air in vast spaces, completing a feeding grass fed with natural supplements.
The Piedmontese breed was born from the cross between the Pakistani zebu, which arrived about 30,000 years ago in today's Piedmont, and the pre-existing cattle breed. It is widespread in almost the entire region, but mainly in the Asti area, and is characterized by a muscular hypertrophy of the thigh called fassone. Its meat is tender and lean.
The rolata is stuffed with cooked ham (gluten-free) and natural flavors.

Methods and time of conservation

Each cut of meat is packaged "vacuum skin", to maintain the maximum quality of the meat and so that it can be stored up to 20 days in the refrigerator without any problem. Eventually, if after this time it has not yet been consumed, it can be frozen directly in its package.

Tasting tips

We recommend opening the vacuum-packed products 1 or 2 hours before cooking them, according to the cuts, in order to oxygenate the meat, restore its original color and allow it to reach the optimal temperature to be cooked (i.e. room temperature)

Shipment

Shipments of perishable products, which need to be stored at a controlled temperature, are made on Mondays, Tuesdays and Wednesdays. For orders placed from Thursday to Sunday, the shipment will take place in the following week, in order to avoid stocks on Saturday and Sunday and the consequent risk of alteration of the food.

Amene colline ai piedi delle montagne, aria pura e frizzante, verdi prati, boschi profumati e tante mucche che pascolano tranquille e si abbeverano al ruscello... No, non è il film di Heidi. È una bellissima realtà a Montegrosso Cinaglio tra le splendide colline del Monferrato, patrimonio dell'umanità Unesco, in provincia di Asti.
Qui sulla collina chiamata Serra, la famiglia Cerrato alleva bovini da 4 generazioni, ma è con il Sig. Claudio che da qualche anno la combinazione tra la saggezza di una solida tradizione e lo slancio visionario verso l'innovazione ha dato risultati davvero strabilianti. I capi di bestiame, oltre 200, pascolano liberi e si alimentano esclusivamente ad erba, piante aromatiche e fieno (grass fed). Mangimi, antibiotici e conservanti sono banditi da questo angolo di mondo.
Inoltre i bovini vengono ben accuditi, allevati per almeno 20 mesi (tra 20 mesi e 4 anni) e conducono una vita priva di stress. Ciò si vede anche dal colore della carne che non è mai "febbrata", quel colore scuro segno di disagio e sofferenza per il trasporto alla macellazione. A Casa Serra anche nella loro ultima passeggiata i bovini vengono accompagnati dallo stalliere. Fondamentale è poi la frollatura, particolarmente lunga, almeno 28 giorni.
Il risultato è una carne semplicemente diversa, tenera, che non rilascia acqua in cottura, sana e buonissima.
Abbiamo selezionato tagli nobili, tagli particolari e difficilmente trovabili (come il diaframma) e anche meno pregiati, fino a trita per animali ma tutti di altissima qualità e con le stesse caratteristiche organolettiche.
Le razze sono 2: la Piemontese, razza autoctona del Piemonte dalla coscia molto accentuata, carne tenera, saporita e di colore intenso, soprattutto indicata come costata, bollito, brasato al Barolo e carne cruda all'albese; la Blonde d'Aquitaine, originaria del sud-ovest della Francia, più grande della Piemontese, dalla carne più chiara e più delicata nel sapore, particolarmente adatta a vitello tonnato, spezzatini, fettine da burro e straccetti.
Tutti i tagli vengono confezionati sottovuoto in ambiente "Refine Air", che distrugge in modo naturale muffe, lieviti e batteri fino al 98%. Ciò fa sì che la carne, trasportata e consegnata a voi sottovuoto con spedizione refrigerata, si conservi in frigo per almeno 3 settimane. Se non doveste consumarla subito, vi consiglio comunque di congelarla. Unica raccomandazione: prima di gustare questa carne grass fed toglietela dal sottovuoto almeno un'ora prima di cucinarla per far sí che riacquisti il colore originario e sprigioni tutti i suoi aromi.
